➢ 100 grams of flour
➢ 80 ml milk
➢ 80 ml water
➢ 70 grams of butter
➢ 100 grams flour
➢ 2 eggs
➢ 4 tablespoons sour cream
➢ 1 teaspoon mustard
➢ 1/2 lemon
➢ salt and pepper
➢ 30 grams of caviar
Make the choux pastry. Put the water, a pinch of salt and the butter in a saucepan.
Bring to the boil, then add the flour.
Mix over a low heat until you have a paste.
Once the dough has formed, remove the pan from the heat and allow to cool.
Add the eggs to the dough
Work the dough with your hands to form the choux
Bake at 180°C for about 15 minutes.
Make the inside of the choux. In a bowl, mix the crème fraîche, mustard, lemon, salt and pepper.
Put the mixture in a piping bag.
Once the choux are cooked and cooled, fill them with the mixture.
On top of the choux, add the caviar and enjoy!
